
INGREDIENTS
- 1 onion, chopped
- 2 small peppers, seeded and chopped
- 3 cloves garlic, minced
- 2 teaspoons minced fresh ginger
- 2 teaspoons ground cumin
- ½ teaspoon salt
- ¼ teaspoon ground coriander
- ¼ teaspoon ground cinnamon
- 1/8 teaspoon red pepper flakes
- 4 cups water
- 1¼ kg sweet potatoes, peeled and chopped into 4 cm pieces
- 2 (400 gm) cans diced tomatoes drained (or 6 whole medium tomatoes)
- 2 (400 gm) cans chickpeas drained and rinsed (or 800 gm boiled chickpeas)
- 1 (400 gm) can sliced green beans, drained
- ¼ cup peanut butter
PREPARATION METHOD
- Light your Envirofit SuperSaver Charcoal Jiko using little charcoal.
- Place onion, peppers, garlic, ginger, cumin, salt, coriander, cinnamon and red pepper flakes in a large sufuria. Pour in water and stir to combine. Mix in sweet potatoes, tomatoes, chickpeas and peanut butter.
- Cover and bring mixture to a boil, then close the SuperSaver air regulator slightly to simmer.
- Cook until sweet potatoes are tender and stew has thickened. Stir in green beans, cover and continue cooking until beans are heated through.
