Tilapia with Grape Chutney

INGREDIENTS

  • 400 gm skinless tilapia fillets cut into 4 pieces
  • Salt to taste
  • Ground black pepper
  • 2 tablespoons cooking oil
  • 1 cup seedless green grapes
  • ½ cup tropical-blend mixed fruits (e.g. apples, pineapples, bananas, oranges)
  • 1/3 cup sliced green onions

PREPARATION METHOD

1. Rinse fish; pat dry with paper towels. Season with salt and pepper.
2. Light your Envirofit SuperSaver Charcoal Jiko using little charcoal.
3. In a deep skillet, heat oil over medium-high heat (by slightly closing the SuperSaver air regulator); add fish. Cook for 3 to 4 minutes or until fish flakes easily when tested with a fork, turning once. Meanwhile cut the grapes into halves.
4. Transfer fish to platter; keep warm. Add grapes, mixed fruit and, green onions to skillet; cook and stir 2 minutes.
Season to taste with salt and pepper.
5. Serve sauce over fish to your family and see them enjoy and want more!
