
INGREDIENTS
- 2 tilapia fillets (preferably fresh)
- 1 small onion finely chopped
- 3 cloves garlic grated
- 2 cm piece of ginger grated
- 2 tomatoes chopped
- 1 teaspoon turmeric powder
- 1 teaspoon curry powder
- ¼ cup plain yogurt or maziwa lala
- Juice of 1 lime
- Vegetable oil
- Salt
PREPARATION METHOD
- Clean the tilapia and cut each fillet into 3 large pieces, add the lemon juice and ½ teaspoon of turmeric and a pinch of salt to the fish and mix well. Let that marinate for an hour or so.
- When ready to cook, light your Envirofit SuperSaver Charcoal Jiko using little charcoal.
- Heat 2 tablespoons of the vegetable oil in your pan. Add the fish pieces one by one in a single layer.
- Brown 4-5 minutes depending on the size and then carefully flip them over, making sure they are cooked well. Set them aside.
- Add a tablespoon of oil to the pan. Add the chopped onions and cook until they start to brown.
- Add grated ginger and garlic and cook a few more minutes, then add the curry powder and let that cook for a minute.
- Add the tomatoes, cook for 2 minutes, then add some water stirring until it reaches your consistency.
- Stir in the yoghurt, then add the fish pieces back to the curry and let it simmer for a few minutes.
- Season to taste.
