
INGREDIENTS
- 8 plantains or green bananas peeled and diced
- Juice from one lemon
- 2 tablespoons vegetable oil
- 1 onion chopped
- 1 bell pepper (hoho) chopped
- 3 cloves garlic minced
- 3 chillies finely chopped (optional)
- 1 tablespoon ground coriander
- 4 tomatoes chopped
- 2 cups water or beef stock
- Salt & black pepper to taste
- 3 tablespoons natural Peanut-butter (i.e. unsweetened) / groundnut paste
PREPARATION METHOD
- Peel the matoke and sprinkle lemon juice on them. Set aside.
- Light your Envirofit SuperSaver Charcoal Jiko using little charcoal.
- Heat the oil in a large pot. Add the onions and bell pepper and sauté until the onion is cooked through and translucent, about 3 or 4 minutes. Add the garlic, chillies and coriander and sauté for another minute or so.
- Stir in the tomatoes and cook, covered, for another 2 or 3 minutes.
- Stir in the matoke.
- Add the beef stock or water and season with salt. Bring to a boil, then cover and simmer by closing the SuperSaver air regulator, for about 30 minutes or until matoke are softened.
- Stir in the natural peanut butter/groundnut paste.
- Adjust seasoning and serve hot, with a protein of choice and see your family enjoy and want more!
