INGREDIENTS
•2 cups white rice
•¼ cup vegetable oil
•1 tablespoon peanut butter
•1 teaspoon dried thyme
•¼ tablespoon curry powder
•1 sliced onion
•1 diced green pepper
•3 crushed garlic cloves
•1 cup diced chicken breast
•1 inch grated ginger
•1 tablespoon ground paprika
•2 tablespoons cayenne pepper
•3 tablespoons tomato paste,
•2 chopped tomatoes
•1 carrot cubed
•2 chicken stock cubes
•1 bay leaf
•4 cups water
PREPARATION METHOD
1.Light your Envirofit Supersaver Charcoal Jiko using little charcoal.
2.Add oil and peanut butter in a sufuria, then add the chicken breast, paprika, cayenne pepper, onion, green pepper, garlic and ginger. Fry for about 3 minutes. Add the chopped carrots and stir.
3.Add the tomato paste, tomatoes, curry powder, bay leaf & thyme. Cover and cook until tomatoes get slightly soft. Add the water and stock stock cubes and bring to a boil.
4.Add in the rice and cook for about 30 minutes until the rice is ready.
