Stewed Peas

INGREDIENTS

  • 2 tablespoons olive oil
  • 1 kg beef chopped.
  • 2-3 green onions diced
  • 2-3 teaspoons minced garlic
  • 2 teaspoons fresh thyme
  • 2 teaspoons smoked paprika
  • 1 large bay leaf
  • 4 cups boiled pigeon peas
  • 2 cups coconut milk
  • Salt and pepper, to taste

PREPARATION METHOD

  1. Light your Envirofit SuperSaver Charcoal Jiko using little charcoal.
  2. Heat the oil in the pan over medium heat. Add beef and cook for about 2 to 3 minutes, until beef slightly browns up.
  3. Add onions, green onions, garlic, thyme, bay leaf, paprika, salt, pepper and sauté for about 3 to 5 minutes.
  4. Pour in coconut milk and peas and bring to a boil. Reduce heat (by slightly closing the SuperSaver air regulator) and simmer for about 40 minutes or until meat is tender.
  5. Add coconut milk and cook for a further 15 minutes.
  6. Let it cook until tender – about 15 to 20 minutes.
  7. Serve piping hot to your family alongside rice and see them enjoy and want more!
