Scrambled Eggs With Sausage

INGREDIENTS

  • 2 eggs
  • 2 tablespoons chicken stock
  • ½ teaspoon ground black pepper
  • 250 gm cooked sausage
  • ¼ cup tomatoes, quartered

Preparation Method

1. Light your Envirofit SuperSaver Charcoal Jiko using little charcoal.
2. Preheat skillet over low heat (by closing the SuperSaver air regulator.)
3. In a medium bowl, whisk eggs, stock and black pepper; stir in sliced sausage.
4. Pour egg mixture into hot skillet. Cook over medium heat, without stirring, until mixture begins to set on the bottom and around edges.
5. With a large spoon, lift and fold the partially cooked egg mixture so the uncooked portion flows underneath. Continue cooking until almost set; add tomatoes. Cook about 1 minute more or until egg mixture is cooked through but is still glossy and moist.
6. Serve on chapati or toasted bun and see your family enjoy and want more!
