Peanut Flavored Matoke

INGREDIENTS

  • 8 plantains or green bananas peeled and diced
  • Juice from one lemon
  • 2 tablespoons vegetable oil
  • 1 onion chopped
  • 1 bell pepper (hoho) chopped
  • 3 cloves garlic minced
  • 3 chillies finely chopped (optional)
  • 1 tablespoon ground coriander
  • 4 tomatoes chopped
  • 2 cups water or beef stock
  • Salt & black pepper to taste
  • 3 tablespoons natural Peanut-butter (i.e. unsweetened) / groundnut paste

PREPARATION METHOD

  1. Peel the matoke and sprinkle lemon juice on them. Set aside.
  2. Light your Envirofit SuperSaver Charcoal Jiko using little charcoal.
  3. Heat the oil in a large pot. Add the onions and bell pepper and sauté until the onion is cooked through and translucent, about 3 or 4 minutes. Add the garlic, chillies and coriander and sauté for another minute or so.
  4. Stir in the tomatoes and cook, covered, for another 2 or 3 minutes.
  5. Stir in the matoke.
  6. Add the beef stock or water and season with salt. Bring to a boil, then cover and simmer by closing the SuperSaver air regulator, for about 30 minutes or until matoke are softened.
  7. Stir in the natural peanut butter/groundnut paste.
  8. Adjust seasoning and serve hot, with a protein of choice and see your family enjoy and want more!
