Peel the matoke and sprinkle lemon juice on them. Set aside.
Light your Envirofit SuperSaver Charcoal Jiko using little charcoal.
Heat the oil in a large pot. Add the onions and bell pepper and sauté until the onion is cooked through and translucent, about 3 or 4 minutes. Add the garlic, chilies and coriander and sauté for another minute or so.
Stir in the tomatoes and cook, covered, for another 2 or 3 minutes.
Stir in the matoke.
Add the beef stock or water and season with salt. Bring to a boil, then cover and simmer for about 30 minutes or until matoke are softened.
Stir in the natural peanut butter/groundnut paste.
Adjust seasoning and serve hot, with a protein of choice, and see your family enjoy and want more!
